In her work she is well aware that the intrinsic quality of the wine and a good match with the food are much more important than the prestige of the label...

Aperitifs

 

Champagne Albert BEERENS Brut, Cuvée Carte noire – 25 euros supplement (except for the menu d’exception)
An owner producer at Bar-sur-Aube. A blend of Chardonnay, Pinot noir and Pinot Meunier.
Fine bubbles and a nose of citrus and white fruits. Round in the mouth, balanced with honey and nutty notes.
 
Méthode traditionnelle (champenoise) rosé from the Domaine Les Vaucorneilles (Gilles Chelin)
Méthode Traditionnelle (traditional Champagne method) Cabernet-Franc and Gamay.
Fine, fresh bubbles and floral scents.

White wines

Faugères from the Domaine Ollier-Taillefer - Full-bodied elegant wine. A nose of white flowers, marked with linden and lemon balm
 
Côte d’Auxerre by Jean-Michel Daulne - 2007 - A prize-winner at the Competition for the World's best Chardonnay in 2005. Light, fresh and fruity
 
Gewürztraminer from the Domaine Charles et Dominique Frey – Granite hills - 2007 – A famous white grape variety from Alsace. A very fruity, robust and finely-balanced wine
 
Graves – Château Le Bonnat - 2007 - The favourite Graves of the Bordelais! A nose of crystallised fruits with notes of apricot, associated with toasted aromas. Round and full-bodied in the mouth, marked by the dominant flavour of Sémillon
 
Puligny-Montrachet from the Domaine de Marc Colin – 2007– 25 euros supplement (except for the menu d’exception) - From an estate recognised as one of the best of the Côte de Beaune. Superb vintage, round, pure and fruity, with low acidity.

Red wines

Vin de pays from the Rhone hills by Stéphane Ogier, La rosine - 2007 - Young Syrah vines providing a nice introduction to a domain which also produces superb Côtes Rôties. An elegant, intense ruby wine, with a blackcurrant and liquorice nose. Round in the mouth with well robed tannins, fresh and harmonious.
  
Cru Bourgeois Medoc - Château Haut Maurac - 2003 - Neighbouring all the great Medoc vintages, this wine offers complex and fresh aromas, with delicate hints of vanilla, liquorice and cherry. Its elegant structure associates velvety tannins with an astonishing freshness. A complex and generous wine!

Bourgogne Hautes Côtes de Nuits - Domaine Aegerter - 2006 - A fine Burgundy marked by the lightness of its aromas suggestive of fresh cherries. Round and supple with an aroma which lingers in the mouth.

Saint-Emilion Grand cru – Château Jean-Faure - 2006 – 30 euros supplement (except for the menu d’exception) - Domain adjacent to the Château Figeac and Cheval Blanc, this very great wine is distinguished by its finesse. Elegance and depth in addition to a nice touch of acidity to give it its freshness.
 
Chateauneuf-du-Pape, Domaine de la graveirette – 2006 (Julien Mus) – 15 euros supplement (except for the menu d’exception)
An outstanding wine which combines elegance and a strong nose. Aromas of black fruits (myrtle, blackberries), spicy notes (saffron), accompanied with animal flavours (leather)
